SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 eggs, beaten with fork
1/3 stick butter
1/2 c. evaporated milk
1 tsp. vanilla
1 tsp. cinnamon

CRUST:

1/3 stick butter, room temp.
1 c. light brown sugar
1/3 c. flour
1 c. chopped nuts

Mix well all the first 8 ingredients. Pour into baking dish. In separate bowl, mash together ingredients for crust until crumbly. Sprinkle over mashed potato mixture and bake at 350 degrees for 35 minutes.
