COCONUT CREAM PIE 
1 c. sugar
1/4 c. cornstarch
3 eggs, separated
1 2/3 c. milk
4 tbsp. butter
1 tsp. vanilla
1 1/4 c. coconut
9" pie shell, baked
4 tbsp. sugar

Combine sugar and cornstarch, beat egg yolks until lemon colored. Add milk and stir into sugar and cornstarch. Cook over medium heat, stirring constantly until thick. Remove mixture from heat, add butter, vanilla and coconut. Pour into cooled pie shell. Top with meringue. Make meringue using egg whites and 4 tablespoons sugar. Serves 6.
