KING'S ARMS TAVERN CHICKEN AND
HAM
 
1/3 c. flour
1/3 c. fine cracker crumbs
4 large chicken breasts, boneless and flattened
2 tbsp. butter
2 tbsp. vegetable oil
4 thin slices Virginia ham
salt and pepper to taste

Grape Sauce:

1 c. chicken stock
1/2 c. orange juice
3/4 c. seedless grapes
1/4 c. raisins
1/4 tsp. sugar
1/8 tsp. nutmeg
1/8 tsp. cinnamon
1 tbsp. cornstarch

Combine flour and crumbs; season chicken breasts with salt and pepper and roll breasts in mixture. Heat butter and oil in heavy skillet. Add the chicken breasts and sauté until golden brown. Place each breast on slice of ham that has been warmed and roll together. Pour Grape Sauce over and serve immediately.

Sauce: Combine the first 7 ingredients of the sauce and bring to a boil. Thicken sauce with the cornstarch, dissolved in a little cold water.
