CHICKEN AND SAUERKRAUT (Greek) 
4-6 chicken breasts
4 tbsp. butter
Salt and pepper
2 med. onions, chopped
1 c. chopped celery
1 (28 oz.) can Italian tomatoes
1 lb. sauerkraut
2 cinnamon sticks
1/2 lemon, sliced

Brown skinned chicken breasts in butter in a cast iron frying pan or heavy skillet, until golden brown on all sides. Sprinkle with salt and pepper. Add onions, celery and, after a few more minutes of browning, add tomatoes.

Rinse sauerkraut and add to mixture with slices of lemon and cinnamon sticks. Simmer over low heat for 1 - 1 1/2 hours. Serves 4-6. Serve with fresh green salad and hard bread or crusty Italian bread.

This was a very useful recipe! I didn't want to ruin the probiotic benefit of the sauerkraut by cooking it (killing the beneficial bacteria and damaging the enzymes), so I varied the recipe by leaving the sauerkraut out and mixing it in uncooked after the rest has been cooked, and it was delicious!
