VICTORIA SPONGE SANDWICH 
1/2 c. butter (1 stick)
1/2 c. sugar
2 lg. eggs
1 c. self-rising flour

Beat together butter and sugar until soft and creamy. Add eggs, 1 at a time and continue to beat. Sift flour and fold it lightly into the mixture with a large metal spoon. Divide the mixture into 2 small shallow round baking tins, previously greased and dusted with flour. Bake at 350 degrees for 25 minutes. Cool on a wire rack. Sandwich together with jam, and dust with confectioners' sugar.

ALTERNATIVES: Flavor sponge mixture with lemon rind, orange rind or 1 tablespoon cocoa plus 1 teaspoon baking powder. Sandwich together and frost with flavored butter cream, lemon, orange or chocolate.
