BAKED CHICKEN & APPLES 
8 chicken parts
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. ginger
1/4 tsp. curry powder
1/4 tsp. cinnamon
Vegetable cooking spray
1/4 c. water
3 apples, cored & sliced

In small bowl, mix together salt, pepper, ginger, curry and cinnamon; set aside 1/4 of this mixture (1/2 teaspoon). Sprinkle chicken with remaining spice mixture. Spray cooking spray in fry pan; heat over medium heat. Add chicken and cook, turning about 15 minutes. (Brown on all sides.)

Pour off and set aside all accumulated oil from pan. Add water and 1/2 teaspoon spice mixture. Stir in reserved drippings. In 2 quart dish, arrange slices of 2 apples; top with browned chicken. Slice remaining apple on top. Pour liquid (from fry pan) over all. Cover and bake at 350 degrees for 45 minutes.

Very tasty recipe, and easy to make. I used fresh apple cider instead of the water, used an oven safe pan to brown the chicken and put that pan in the oven with a cover. Came out moist and delicious.
