BAKED CHICKEN AND APPLES 
8 chicken parts with skins removed
1/4 tsp. pepper
1/4 tsp. ginger
1/4 tsp. curry powder
1/4 tsp. cinnamon
Vegetable cooking spray
1/4 c. water
3 apples, cored and sliced

In a small bowl mix together spices. Set aside 1/2 teaspoon and sprinkle chicken with remaining spice mixture. Spray non-stick fry pan with cooking spray; heat over medium temperature. Add chicken and cook, turning every 15 minutes or until brown on all sides.

Add water to the reserved 1/2 teaspoon spice mixture. In a 2 quart baking dish arrange slices of two of the apples; top with browned chicken. Place remaining apples on chicken; pour liquid over all. Cover and bake at 350 degrees for approximately 45 minutes.
