SAUSAGE SLOPPY JOES 
1 tbsp. butter
1 onion, thinly sliced
1 green pepper, thinly sliced
8 oz. can sliced mushrooms, drained or 1/2 lb. fresh, sliced
1 sm. can sliced olives
2 sm. pepperoni sausages, sliced thin
1 tbsp. cornstarch
2 tbsp. water
28 oz. can chopped tomatoes, drained
4 hamburger buns, toasted open
1 1/4 c. grated Mozzarella cheese
Salt & pepper

Saute onion, green pepper and fresh mushrooms in butter. Stir in tomatoes and season to taste. Add olives and pepperoni, add canned mushrooms if used. Microwave 4 minutes or simmer on medium-low heat on stove 10 minutes. Mix starch with water, stir into mixture. Place buns in stacked pairs, open ends both up. Spoon mixture over, top with cheese and broil until melted. Recipe can be stretched or adapted to small mouths by not stacking the buns.

Since microwave ovens vary in power, you may need to adjust your cooking time.
