BAKED PARMESAN RICE 
3 tbsp. butter
2/3 c. rice (not minute rice)
2 c. chicken broth
1/2 c. grated Parmesan cheese
2 tbsp. snipped parsley
Salt & pepper to taste

Melt butter in a skillet; add rice. Cook, stirring constantly until rice is light brown. Pour rice into a 1 quart casserole dish. Add remaining ingredients and cover with a tight fitting lid. Bake at 350 degrees for 50 minutes. Stir after rice has cooked approximately 30 minutes. Serves 5-6.
