CANDIED YAMS 
3 med. yams
1/4 lb. butter
1/2 c. orange juice
1 c. firmly packed brown sugar

Early in day, boil yams until tender. Cool and peel. Slice into 1/2 inch thick rounds. Place in a large greased baking dish. In small saucepan heat butter, juice and brown sugar. Pour over yams. Chill several hours. Then cook in preheated 350 degree oven 30 to 40 minutes.
