JAM MUFFINS 
1 egg
1 c. milk
1/4 c. vegetable oil
2 c. sifted flour
1/4 c. sugar
3 tsp. baking powder
1 tsp. salt
Strawberry jam or your preference

Grease only bottom of muffin tin, or put in paper liners. Beat egg slightly. Measure milk and stir into egg. Measure and stir in oil. Put dry ingredients into sifter. Stir directly into egg mixture, just until moist. Mixture should be lumpy.

Fill muffin tins 1/3 full. Drop a teaspoon of jam in center. Add batter until 2/3 full. Bake at 400 degrees for 20-25 minutes. Place on wire rack to cool. Serve warm if possible. Makes one dozen.
