ZUCCHINI NUT MUFFINS 
2 eggs
1/2 c. brown sugar
1/2 c. honey
1/2 c. melted butter
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. nutmeg
2 tsp. cinnamon
1 c. oats
1/2 c. chopped nuts
1/2 c. raisins
2 c. shredded zucchini

In large bowl beat eggs, then beat in sugar, honey, butter and vanilla. In another bowl, mix flour, soda, salt, baking powder and spices. Add to egg mixture and stir until moist. Stir in oats, nuts, raisins and zucchini. Spoon into greased muffin tins, filling 3/4 full. Bake at 350 degrees for 25 minutes.
