ZUCCHINI MUFFINS/BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 tsp. vanilla 2 c. ground zucchini 8 oz. crushed pineapple, drained 3 c. flour 1 tsp. salt 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 2 tsp. baking soda 1/2 tsp. baking powder 1 c. raisins 1 c. chopped nuts Beat eggs, slowly add oil, sugar, and vanilla. Mix until thick and foamy. Stir in zucchini and pineapple. Separately, mix baking soda, salt, baking powder, spices, flour, nuts, and raisins. Stir dry ingredients into flour mixture until just blended. Pour into 2 greased loaf pans or muffin pans/baking cups. Bake loaves at 350 degrees for 1 hour, muffins for 18-20 minutes. |
