ZUCCHINI BREAD/MUFFINS | |
3 c. flour 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 3 tsp. cinnamon 3 eggs 2 c. sugar 1 c. oil 2 1/2 c. grated raw zucchini 2 tsp. vanilla 1 c. chopped raisins, if desired Combine flour, salt, soda, powder and cinnamon. Beat eggs, until light. Stir in sugar, oil, zucchini, and vanilla. Add dry ingredients and then raisins. Pour into greased pans (2 loaves) or into greased Texas size muffin tins. Bake at 350 degrees for 1 hour. |
