NEVA'S OLD FASHIONED TEACAKES | |
1/2 c. butter, softened 1 c. sugar 1 egg 1/2 tsp. vanilla 2 1/4 to 2 1/2 c. all-purpose flour 1/2 tsp. baking soda 1/4 c. buttermilk pinch of salt Cream butter. Gradually add sugar, beating well with mixer. Add egg and vanilla. Beat well. Combine flour, soda and pinch of salt. Add to creamed mixture alternately with buttermilk. Mix well. Add remaining 1/4 cup flour if dough seems sticky. Cover and chill 8 hours (or less). Roll dough to 1/4-inch thickness on lightly floured surface. Cut with 3-inch round cutter. Place on lightly greased cookie sheet. Bake at 375°F for 8 to 10 minutes. Makes about 2 dozen. |
