BLUEBERRY TEACAKES | |
1 3/4 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. ground ginger 1/2 tsp. ground nutmeg 1/3 c. unsalted butter 1 c. sugar 2/3 c. milk 2 eggs, lg. 1 1/2 c. blueberries 2 tsp. flour 1 tsp. sugar Preheat oven to 375 degrees; grease and flour 9 inch square pan; cooking time 35-40 minutes. Sift first 3 ingredients and set aside. Mix spices with butter. Blend sugar with spiced shortening. Add eggs one at a time until smooth. Add flour mix and milk, alternating until all is added. Toss washed blueberries with remaining flour and sugar. Carefully fold into batter. Pour into prepared pan. Best served cut into squares and hot with butter. |
