DOWN MAINE BLUEBERRY PIE - MAY'S | |
1 baked 9" pastry shell (let it get cold before using) 1 qt. blueberries 1 c. sugar 3/4 c. water 2 tbsp. flour 1/4 tsp. salt 1/4 c. water Cook 1 cup of the blueberries with 1 cup of sugar and 3/4 cup of water until the berries are soft. Make a paste of the 2 tablespoons of flour, 1/4 teaspoon salt and 1/4 cup water. Then add this to the cooked berries and slowly cook and stir until slightly thickened. Add hot mixture to the 3 remaining cups of blueberries. When cool, turn into the pie shell and chill for at least 3 hours. Serve topped with whipped cream or vanilla ice cream. |
