HOMEMADE BEEF SAUSAGE | |
5 lbs. lean beef or ox meat 3 c. water 1 1/4 tsp. salt 1/2 tsp. pepper 2 tsp. allspice or if you prefer, sausage seasoning 2 tsp. salt Place meat, water, salt, and pepper in pressure cooker. Cook until very tender, the time will depend on the kind of meat it is. Cook at least 30 minutes. Cool the meat in the broth and skim off the fat. Trim and remove the bone. Cut into pieces and pass through the meat grinder. Mix in the 2 teaspoons of salt and seasonings. If you are using sausage seasoning that is prepared, you may need to reduce the amount of salt. Stir in enough of the broth to make a moist sausage. Pack into plastic sacks or round containers. To use, unfrost and slice. Cook as for pork sausage over low heat, starting with a small amount of water in the skillet. |
