STREUSEL SWEET POTATOES 
3 1/2 lbs. sweet potatoes
3/4 c. lite pancake syrup
1/2 c. orange juice
1/4 c. (4 tbsp.) butter, cut into sm. pieces

Cook potatoes in water to cover potatoes, cover and cook for 20 to 30 minutes until firm. Drain, peel and slice in 1/2 inch thick slices. Heat oven to 325 degrees. Lightly grease 9 x 13 pan or 1 1/2 quart shallow pan (glass). Arrange overlapping slightly in dish. Mix 1/2 cup syrup with orange juice, pour over potatoes. Dot with 1 tablespoon butter. Cover tightly with foil. Bake for 20 to 30 minutes until potatoes have absorbed liquid. Remove from oven. Sprinkle with streusel and bake uncovered for 15 minutes.

STREUSEL:

1/2 c. flour
1 tbsp. brown sugar
1/2 tsp. cinnamon
1/3 c. walnuts
3 tbsp. butter

Mix together flour, sugar, butter, cinnamon then add nuts.
