POTATOES WITH EGGS AND CREAM | |
3 c. diced cooked potatoes 1 tbsp. butter Salt & pepper to taste 2 eggs, beaten 1 c. sour cream 1 tbsp. chopped chives Melt butter in frying pan and saute potatoes until they are thoroughly heated. Add salt and pepper. Add sour cream, eggs and chives. Bake covered in 350 degree oven for 1 hour. Serves 4-6. |
