BANANA OAT BRAN MUFFINS 
1/4 c. raisins soaked in 1/2 c. boiling water
1 1/4 c. oat bran
2 tsp. baking powder
3/4 tsp. baking soda
4 egg whites
1/4 c. honey
3/4 c. buttermilk
1/4 c. oil
2 very ripe bananas

Combine dry ingredients. Whip egg whites until fluffy. Mix honey, buttermilk and oil. Fold into dry ingredients gently. Add egg whites and mashed bananas and drained raisins. Mix lightly. Bake at 425 degrees for 15 to 17 minutes. Makes 12 muffins.
