OAT BRAN AND BANANA MUFFINS 
1 1/2 c. flour
1/2 c. sugar
1/2 tsp. salt
1/4 c. butter, melted
3/4 c. milk
1 tsp. vanilla
2 egg whites
2 ripe bananas, chopped
1 c. chopped pecans
1 c. oat bran
1 tbsp. baking powder

Grease 12 muffin cups or line with paper muffin cups. Combine dry ingredients. Whisk milk, butter, egg whites and vanilla. Add milk mixture to dry ingredients. Mix in bananas and 1/2 cup pecans. Fill muffin cups 2/3 full. Sprinkle remaining pecans over each muffin. Bake at 350 degrees for 17-20 minutes. Yields: 12-15 muffins.
