BANANA BRAN MUFFINS 
1 c. flour
3/4 c. oat bran
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/3 c. butter
2/3 c. sugar
1 egg
1/4 c. skimmed or low-fat milk
2 mashed bananas
1/2 c. walnuts

Mix flour, oat bran, baking powder and salt. Then mix butter with the sugar, egg, milk and mashed bananas. Add to first mixture. Add walnuts if you choose. Bake at 350 degrees for 20 to 25 minutes.
