BANANA OAT BRAN MUFFINS 
1 1/2 c. oat bran cereal
3/4 c. whole wheat or all-purpose flour
1 tbsp. baking powder
12 packets artificial sweetener
1/2 c. skim milk
1/2 c. walnuts
1 c. mashed bananas or 1 c. unsweetened applesauce
1/3 c. safflower oil
1/4 c. egg substitute or 2 egg whites
1 (8 oz.) pkg. dates, chopped
1/2 c. raisins

In large bowl, combine bran cereal, flour, baking powder and artificial sweetener. In small bowl, combine milk, bananas, oil and egg substitute. Add to dry mixture and let it sit about 3 minutes until batter thickens. Add dates, raisins and walnuts; pour into 12 lightly greased muffin tins. Bake at 400 degrees about 12 to 15 minutes or until a toothpick inserted in muffin comes out clean.
