BANANA BLUEBERRY MUFFINS 
2 med. bananas
2 eggs
1 c. packed brown sugar
1/2 c. butter, melted
1 c. blueberries
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt

Mash bananas. Should equal 1 cup. Combine bananas, eggs, sugar, and melted butter until well blended. Stir in blueberries and vanilla.

In a separate large bowl, combine flour, baking powder, cinnamon and salt. Stir banana mixture into flour mixture until evenly moistened. Fill muffin cups 2/3 full. Bake at 400 degrees for approximately 25 minutes or until a pick comes out clean. Makes 12 regular muffins. Serve warm.

OPTIONAL: Omit blueberries and add 1/4 cup nuts, 1/2 to 3/4 cup chocolate chips and 1/2 cup maraschino cherries. Pour into a greased loaf pan and bake at 350 degrees for 40 minutes or until done.

This is the best banana blueberry muffin recipe I have ever made. The blueberries do not sink to the bottom but stay moist throughout the muffin.
Changes: 1 1/2 tsp vanilla extract, 1/2 c melted Smart Balance marg (not smart balance light) instead of butter, used 1/4 c wheat germ, 1/2 c whole wheat flour, about 1 and 1/3 c all purpose unbleached flour. Baked 20 mins. Yum!
