CLEMENTINES OATMEAL CHOCOLATE
CHIP COOKIES
 
1 1/4 c. softened butter
3/4 c. packed brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/8 tsp. nutmeg
3 c. Quaker oats, quick or Old Fashioned
2 c. chocolate chips
1 c. walnuts, chopped

Preheat oven to 375 degrees. Cream butter with sugars until light and fluffy. Beat in egg and vanilla. Sift flour with baking soda, salt and spices. Add to creamed mixture; mixing well. Stir in oats. Fold in chocolate chips and walnuts. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool one minute on cookie sheet. Remove to wire racks. Makes 6 dozen 2-inch cookies.
