QUICHE LORRAINE 
1 pie crust
12 slices bacon, 1/2 lb., fried crisp and crumbled
1 c. shredded Swiss cheese
1/3 c. minced onions
4 eggs
2 c. half and half
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne red pepper

Heat oven to 425 degrees. Sprinkle bacon, cheese and onion in pastry lined pie pan. Beat remaining ingredients with rotary beater. Pour into pan. Bake 15 minutes. Reduce temperature to 400 degrees and bake 20 minutes longer until knife comes out clean. Let pie stand 10 minutes before cutting. 6 servings.
