QUICHE LORRAINE | |
1 (9 inch) pie crust (may use frozen deep dish pie crust) 12 slices bacon (about 1/2 lb.), crisply fried and crumbled 1 c. shredded natural Swiss cheese (about 4 oz.) 1/3 c. minced onion 4 eggs 2 c. whipping cream or light cream (20%) 1/4 tsp. salt 1/4 tsp. sugar 1/8 tsp. cayenne red pepper Heat oven to 425 degrees. Prepare pastry. Sprinkle bacon, cheese and onion in pastry lined pan. Beat eggs slightly; beat in remaining ingredients. Pour cream mixture into pie pan. Bake 15 minutes. Reduce oven temperature to 300 degrees and bake 30 minutes longer or until knife inserted 1 inch from edge comes out clean. Let stand 10 minutes before cutting. Serve in wedges. 6 main-dish servings. |
