COCONUT PECAN FROSTING | |
2/3 c. sugar 2/3 c. evaporated milk 2 egg yolks 1/3 c. shortening 1/2 tsp. vanilla 1 1/3 c. flaked coconut 2/3 c. chopped pecans In saucepan, combine sugar, evaporated milk, egg yolk, shortening and vanilla. Cook and stir over medium heat, until mixture comes to a boil (about 12 minutes). Remove from heat. Add coconut and pecans. Beat until frosting is thick. Cool 15 minutes. Spread only on tops of cake layers. It takes more muscles to frown than it does to smile. |
