SHEPHERD'S PIE IN A HURRY | |
1 1/2 lb. ground beef 1/4 c. chopped onion or chives 1/2 c. chopped celery Salt and pepper to taste 3 to 4 c. mashed potatoes 1 (17 oz.) can peas 1 (17 oz.) can corn 1 egg, beaten (optional) Peel and cut the potatoes into chunks. Drain the juice from the peas and corn and use this liquid to cook the potatoes. When you drain the liquid to mash the potatoes, save it to make soup stock for another meal. While cooking the potatoes, cook the beef, onion, celery, salt and pepper in the microwave. Drain off the fat. Over the meat, spread the can of corn, then the can of peas. Return to the microwave and heat thoroughly. Top with the mashed potatoes. Serve as is, or spread the mashed potatoes to form an edge and top with the beaten egg, then place under broiler just until egg is browned. |
