GRANDMA'S APPLE PIE SQUARES | |
2 1/2 c. flour 1 c. plus 1 tbsp. sugar 1 tsp. salt 1 c. shortening 1 egg, separated, save egg white Milk 2/3 c. cornflakes, crushed 6 c. apples, peeled & sliced 1 tsp. cinnamon GLAZE: 1 c. powdered sugar 2 tbsp. lemon juice Combine flour, 1 tablespoon sugar and salt. Cut in shortening. Add enough milk to egg yolk to make 2/3 cup. Add and mix enough so dough shapes into a ball. Roll half of dough into a 15 x 11 inch rectangle. Transfer to jelly roll pan, cover with crushed cornflakes. Add apples, 1 cup sugar and cinnamon. Roll out other half dough for top crust. Place over apples, pinch edges together. Top with stiffly beaten egg white. Bake at 400 degrees for 40 minutes. While hot, drizzle glaze over top. |
