CHICKEN PARMESAN 
4 chicken breasts, split
3/4 c. Parmesan cheese
Olive oil
1 clove garlic, minced
3 tbsp. flour
1 1/2 c. chicken stock
1/2 c. sherry
1 lb. mushrooms
1/4 tsp. pepper
1/2 tsp. poultry seasoning

Dip chicken in cheese. Brown chicken in 1/2 inch deep oil in heavy fry pan. Place in casserole. Drain all but 3 tablespoons fat from pan. Add garlic, cook until soft. Add flour and stir until smooth. Add stock, sherry, mushrooms, pepper and poultry seasoning.

Cook, stirring continuously until smooth and slightly thick. Pour over chicken. Bake in a moderate oven for 30-40 minutes. Serve with noodles or over spaghetti. Serves 4.
