PIC-NIC POCKETS 
1 lb. ground beef
1/2 c. shredded cheese (any variety)
1/2 onion, chopped
1/2 bell pepper, chopped
Picante sauce
1 can refrigerated biscuits
Parmesan cheese
Paprika

Preheat oven to 350 degrees. Lightly brown ground beef, onion and bell pepper and salt to taste. Let cool slightly. Roll out each biscuit thin as possible. Place 2 tablespoons meat mixture, 1 teaspoon cheese and 1 teaspoon picante sauce in middle of each biscuit. Fold over and seal. Place on lightly greased cookie sheet and bake 10 to 12 minutes. Sprinkle with Parmesan cheese and paprika. Makes great after school snacks, too.
