SPINACH MADELEIN 
2 pkgs. fresh spinach
1/2 tsp. pepper
3/4 tsp. garlic salt
3/4 tsp. celery salt
1/2 tsp. salt
1/2 c. spinach juice
1 roll jalapeno cheese (hot)
2 tbsp. butter
2 tbsp. flour
2 tsp. chopped onions
1/2 c. evaporated milk
1 tbsp. Worcestershire sauce

Cook spinach. Drain, saving 1/2 cup juice. Melt butter. Add onions and flour. Stir. Add spinach juice and milk slowly. Cook until thick, stirring constantly. Add cheese, seasonings, and spinach. Put in casserole dish and bake at 350 degrees for 30 minutes. May also be put in chafing dish. Dip with corn chips. Don't forget this is a SPICY HOT recipe.
