TABBOULEH 
3/4 c. bulgur (cracked wheat)
1/2 med. cucumber, seeded and coarsely chopped (1 c.)
1/2 c. snipped parsley
6 green onions, sliced fine
1/4 c. olive oil or salad oil
1/4 c. lemon juice
1 tsp. dried or fresh mint, crushed
1/4 tsp. garlic salt
1/8 tsp. pepper
2 med. tomatoes, chopped

Rinse bulgur with cold water and drain. Mix bulgur, cucumber, parsley and onions. Mix remaining ingredients in jar for dressing. Pour over bulgur mixture and toss. Cover and chill. Add tomatoes before serving.
