SPICY TURKEY MEAT LOAF | |
1/2 c. celery 4 med. carrots 2 med. onions 1 bell pepper 2/3 c. wild rice 2 lb. ground turkey meat 1 1/2 tsp. salt 1/2 tsp. pepper 1 egg 1 tsp. prepared mustard 1 tsp. garlic salt Chop celery, carrots, onions and bell pepper into small pieces. Add turkey, rice, salt, pepper, egg and mustard. Place in loaf pan and bake at 350 degrees for 1 1/4 to 1 1/2 hours. BARBECUE SAUCE FOR MEATLOAF: 3/4 c. ketchup 2 tbsp. honey or 4 pkg. of Equal 2 tbsp. Worcestershire sauce 1 tbsp. lemon juice 1/2 tsp. hot chili powder 1/2 c. water Combine all ingredients in pan and boil for 1 minute, turn fire down to simmer and cook until liquid is reduced by one third. Serve sauce over meat loaf. |
