PRESBYTERY CHICKEN 
1 c. light mayonnaise
1 stick butter, melted
2 to 3 tbsp. Dijon mustard
3 lbs. boneless, skinless chicken breasts
1 (16 oz.) pkg. herb stuffing mix

Mix mayonnaise, butter and mustard. Put herb stuffing mix in blender and process into fine crumbs. Dip chicken breasts in mixture and roll in herb stuffing mix. Place in a shallow ungreased baking dish. Cover with foil and bake at 350 degrees for one hour. Remove foil for last 10 minutes to brown chicken. Makes 8 to 10 servings.
