TURKEY CASSEROLE 
Leftover turkey
Leftover turkey stuffing
6 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
3 egg yolks
2 tsp. salt
1 lb. mushrooms
1/4 c. bread crumbs

Cut leftover turkey into good sized pieces. In the bottom of a casserole arrange a layer of cold stuffing and then place the turkey slices on top. Meanwhile, prepare a sauce by melting 2 tablespoons butter, adding flour and stirring until smooth. Next add milk and when the sauce is thickened, pour it over beaten egg yolks and add 1 teaspoon salt. Pour this sauce over turkey and cover with mushrooms which have first been chopped and cook in 2 tablespoons of butter until tender, then combined with the bread crumbs, 2 tablespoons butter and 1 teaspoon salt. Bake at 400 degrees for 30 minutes. Serves 6.
