HILLBILLY BEAN POTLISH FROM THE OSARKS | |
Equal Parts: 9 different dried beans such as - Pinto Black-eyed peas Split peas Lima Etc. Can be used anytime especially on "New Years Day" contains black-eye peas and ham, for luck. 1. Wash bean mixture, cover with water, 1 tablespoon salt and soak 3 hours or overnight. 2. In large pan put 3 tablespoons butter, 4 slices bacon cut into small pieces, 1/2 pound ham cut into 1/2 inch cubes, 1 large onion chopped fine, 1 pot of red or green pepper and 1 clove garlic, saute until tender, but not brown. 3. Drain beans. Add to mixture 2 quarts of water, juice of 1/2 lemon, 3/4 cup wine, 1 can tomatoes, salt and pepper. 4. Cook slow for 4 hours (can start and then place in crock pot. May be kept in icebox for several days, better with age. |
