SHRIMP CREOLE (New Orleans) 
4 lb. raw shrimp in shells
Water
1/2 tsp. salt
3/4 c. vegetable oil
3 tbsp. flour
6-8 green onions, chopped
1 lg. white onion, chopped
2 tsp. salt or to taste
2 tsp. pepper
1 (6 oz.) can tomato paste
4 green peppers, chopped
Hot cooked rice

Bring salted water to a boil and add shrimp. After water return to a boil, boil 3 minutes. Drain, saving shrimp stock. Shell and devein shrimp.
