SHOE PEG SALAD 
1 can shoepeg corn
1 can French style green beans
1 can tiny green peas
1 c. celery, diced finely
1 med. onion, diced finely
1 med. green pepper, diced
1 c. sugar
1/2 c. oil
3/4 c. tarragon vinegar + 1 tbsp. water
Sm. jar pimento
1/2 tsp. pepper

Drain corn, beans and peas. Add celery, onion and green pepper. Mix well. In saucepan combine sugar, oil, vinegar, water and pepper. Bring to boil. Let cool. Pour over ingredients. Refrigerate overnight, covered. Drain before serving. Will keep well for several days.
