CASHEW CHICKEN SALAD WITH DIJON
DRESSING
 
2 c. cooked, chopped chicken
3/4 c. cashew nuts
3/4 c. bean sprouts
6 c. lettuce (red tip lettuce is best)

DRESSING:

1 c. mayonnaise
2 tbsp. Dijon mustard
2 tbsp. lemon juice
2 tbsp. sugar

Toss salad ingredients together. Mix dressing ingredients and whisk until well blended. Top each salad serving with dressing.
