SPINACH & SPAGHETTI 
1 bunch spinach
1 beaten egg
1/2 c. sour cream
1/4 c. milk
2 tbsp. Parmesan
2 tsp. minced onion
1/2 tsp. salt
Pepper
2 c. Jack or Cheddar cheese
4 oz. cooked & drained spaghetti (approximately 2 c.)
2 tbsp. Parmesan

Cook spinach, drain. Combine egg, sour cream, milk, onion, salt and pepper and cheeses. Add spinach and spaghetti, both drained well. Turn mixture into ungreased casserole dish. Sprinkle with last 2 tablespoons of Parmesan. Bake at 350 degrees, approximately 1/2 hour; 15 minutes covered and 15-20 minutes uncovered.
