MAMA'S STRING BEAN SUPPER 
2 1/2 lb. string beans
2 1/2 lb. smoked boneless pork shoulder
4 med. potatoes, peeled
4 sm. onions, peeled; optional
1 tsp. salt; optional

Remove ends of string beans and break beans into 1 inch pieces. Wash in clear water several times. Pour into sink and drain.

Into a five quart pot that has a lid; put beans, smoked pork, potatoes, and onions. Cover with water. Add salt if desired. Bring water to a boil and then reduce heat to a slow boil. Cover and cook about 2 hours or until done.
