PUMPKIN ROLL 
2/3 c. pumpkin
3 eggs
1 c. sugar
1 tsp. baking soda
1/2 tsp. cinnamon (pumpkin pie spice)
3/4 c. flour
Walnuts (optional)

Grease a cookie sheet (15 x 10 inch). Line with wax paper leaving 1 inch extending. Grease the wax paper. Mix above ingredients well with electric mixer. Spread on wax paper on cookie sheet. Sprinkle 1/2 cup chopped nuts on top. Bake for 15 minutes at 375 degrees. Allow to cool for 5 minutes. Sprinkle towel with powdered sugar. Remove wax paper and place cake on linen towel. Roll (tight) long ways. Set for 2 hours. (The towel rolls up with the cake so that the cake doesn't stick together.)

MAKE FILLING:

2 tbsp. butter
3/4 tsp. vanilla
8 oz. cream cheese
1 c. powdered sugar

Mix well. Unroll cake and spread with filling. Roll back up. Refrigerate or freeze.
