DELICATE LEMON PUDDING 
2 tbsp. butter
2/3 c. sugar
2 eggs, separated
Juice of 1 lemon
Grated lemon rind
2 tbsp. flour
1 c. milk

Soften butter and cream with sugar and flour. Add beaten egg yolks, lemon juice, rind and milk. Beat egg whites to peaks and fold into egg yolk mixture. Pour in 1 quart baking dish placed in pan with 1/2 inch water. Bake at 375 degrees for 30 minutes or until knife comes out clean.
