LEMON CAKE PUDDING 
1/4 c. self-rising flour
2 tbsp. butter, melted
1 c. sugar
1 c. milk
1/4 c. lemon juice
Grated rind of 1 lemon
2 egg yolks, beaten
2 egg whites, beaten stiff

Combine flour, butter and 3/4 cup sugar. Add egg yolks, milk, lemon juice and lemon rind. Beat well. Add remaining sugar to stiffly beaten egg whites. Fold into first mixture. Pour into buttered baking dish. Place dish in pan of hot water. Bake in oven for 1 hour at 350 degrees. Chill. When ready to serve, top with Cool Whip. The top is like cake, the under portion is like a delicious lemon jelly.
