MARY'S IRISH RED POTATO SALAD | |
DELICIOUS! 8 to 10 medium red potatoes 1/2 cup chopped scallions 1 tbsp. salt 1 tbsp. pepper 1 cup chopped celery 4 hard boiled eggs, divided 1/2 lb. bacon cooked till crisp (reserving grease) 1 1/2 cups mayonnaise 1/4 cup mustard 1/3 cup sugar 1 tbsp. paprika Boil potatoes till fork tender. Chop into bite size pieces. Add scallions, salt, pepper, celery, three of the eggs chopped fine. Crumble the crisp bacon into bits and add with the grease to the entire mixture. Mix the mayonnaise, mustard and sugar until sugar is dissolved and then coat the potato mixture. Top with the last egg sliced for decoration and sprinkle with paprika. Serve warm or cold.
