FISH OR CLAM CHOWDER 
1 lb. fish fillets, fresh or frozen
2 tbsp. chopped bacon or salt pork
1/2 c. chopped onions
2 1/2 c. diced potatoes
1 1/2 c. boiling water
1 tsp. salt
2 c. milk
1 tbsp. butter
Chopped parsley

With clams, use 1 (6 1/2 oz.) can minced clams.

Thaw frozen fish. Remove skin and bones. Cut fish into 1-inch pieces. Fry bacon until crisp. Add onion and cook until tender. Add potatoes, water, seasonings and fish. Cover and simmer 15 to 20 minutes or until potatoes are tender. Add milk and butter. Heat. Sprinkle with parsley. Makes 6 servings. Good to the last drop!
