SAUSAGE STUFFING 
1/2 lb. sausage
1/2 c. chopped onion
1 1/2 lb. chopped mushrooms
2 2/3 c. precooked rice
3 c. cold water
2 c. diced celery
1/2 c. chopped celery leaves
2 tsp. salt
1/4 tsp. pepper, thyme, and sage

Fry sausage until brown. Add onions and mushrooms; saute 3 minutes. Add rice, cold water, celery, and seasonings. Mix until rice is moistened. Bring quickly to a boil over high, uncovered, fluffing gently once or twice. Cover and remove from heat. Let stand 10 minutes and then spoon stuffing into turkey. Don't pack tightly. Roast at once. makes 9 cubs. Enough for a 10 pound turkey.
